Fourth of July

While Jane Elizabeth was off galavanting about Albuquerque with our weekend houseguests, I headed up to Santa Fe for a great lunch and hike with some fellow clerks and friends.

Lunch was at the Tecolote Cafe, which boasts of its lack of toast.


Although it may not have been quite worthy of its spot on Diners, Dives, and Drive-Ins (above), the Huevos Yucatecos was unique and enjoyable.

We then headed up to the trailhead at Santa Fe Ski Area (elevation of 10,000 feet) and set out on the Windsor Trail toward Nambe Lake. The first 3/4 mile or so consisted of some fairly steep switchbacks.

At this sign, the trail flattened out into a stroll through aspens.

After two miles, we split off toward Nambe Lake. The wildflowers were blooming in a meadow at the fork.

Now, the map says this last part toward the lake was only 1 mile. But as we hiked up there, I had my doubts.

The breaks were many, the progress slow.

The trail paralleled the creek coming out of the lake, so it was a pretty stretch nonetheless. And it gave me a chance to try out the video camera on my new iPhone.


When we made it to the lake, the effort was definitely worth it.

The small alpine lake reminded me of Glacier National Park -- carved into a little cirque among the mountains. But this lake is much higher in elevation than anything in Glacier.

It was a solid day, followed by some beer, brats, and fireworks at home.

Mini herb garden

This is the third time this year I've tried to start a little herb garden on our porch.  The first time, I forgot to water the herbs a couple days in a row and they all died.  The next time, I left them outside when there was a frost and they all died AGAIN.  Thankfully, Lowe's never seems to run out of herbs.  So far, my third attempt has been successful....although it really hasn't been long enough for me to claim success yet :)

Anyway, since I know you've all been waiting impatiently for this, I thought i'd introduce you to my herbs.


Ta da!  Sage, basil and rosemary.  Very creative names, I know :)  I use the basil & rosemary plant a lot...the sage I use less often.  When the sage plant dies from inattentive care (as I'm sure it will, eventually), I think i'll replace it with a mint plant.  I'll need a constant supply of mint for all the mojitos I plan to drink this summer :)

Anyway, there you have it!  If you have any advice on how not to kill herbs, I gladly welcome it.

its impossible to do this hike too many times.  Each time we hike it, I'm reminded of how beautiful this country is!  Thanks, Julian, for giving us an excuse to go again :)

Sausage, Spinach & Pearled Couscous

Ever since I signed up for this pilates class, I've had less time make dinner on Tuesday & Wednesday nights. I get home after my class around 6:40 and Dave arrives home five minutes later---usually starving.  In my effort to come up with super-fast and tasty recipes, I've discovered a good little collection of dinners which typically have no more than 5 ingredients.  So---get excited---I'm starting a new blog category of 5-ingredient dinner recipes :)  Yes, I know, big news.

But seriously, those brothers of mine who have to make dinner themselves these days (ahem, logan & julian) might find these useful.

Here's the recipe for our scrumptious dinner from last night.



5 Ingredients:
whole-wheat pearled couscous
2 links of cooked chicken sausage (i like the sun-dried tomato kind, pictured above)
1 bag of baby spinach
1 garlic clove, minced
olive oil

Directions:
1. Cook 1 cup of whole wheat couscous according to the directions.
2. Slice the chicken sausage & saute the slices briefly in olive oil until they are lightly browned.  Remove the slices from the pan.
3. Saute minced garlic in remaining oil for 30 seconds.  Toss spinach in pan and stir constantly until slightly wilted.
4. Add couscous and sausage into pan with spinach mixture.  Stir to combine.  Serve immediately!
